All tea comes from the same plant, the Camellia sinensis. Teas vary because of differences in growing conditions, the kind of leaves used, and how the leaves are processed.

The differences between the well over two thousand types of tea result from variations in the processing of the leaves after they are harvested. There are essentially four different methods of manufacturing tea, giving us the four major categories: BlackGreenWhite, and Oolong. A fifth category is aged tea, known as Puerh. All can further be categorized as scented or blended.

Like wine, tea also varies according to the region in which it is grown, the sun, rainfall, altitude, soil, season, time of day picked, and the skill of the picker. All truly fine teas have in common that only the most aromatic, young, top two leaves and the unopened leaf bud are used. The production of tea is a labor-intensive process and every step is essential to achieve superior quality.
